Raspberry-Coconut Bars on PaleoParents.com {Paleo, Gluten-Free}
Ingredients
Crust:
- 1-1/4 cups almond flour
- ¾ cup unsweetened shredded coconut flakes
- ¼ cup butter (OR 2 tbsp coconut oil + 2 tbsp ghee), melted
- 3 tbsp coconut sugar
- 2 tsp vanilla extract
- ¼ tsp freshly grated nutmeg
- ¼ tsp sea salt
Filling:
- 2 cups raspberries - fresh [about 1 pint) OR frozen
- 3-1/2 tbsp tapioca flour
- ¼ cup honey
- Juice of ½ a lemon (about 1-1/2 tbsp)
- Zest of 1 lemon
- ½ tsp vanilla extract
- ⅛ tsp sea salt
Topping:
- ½ heaping cup shelled walnuts (pecans work, too)
- ½ cup unsweetened shredded coconut flakes
- ¼ cup almond flour
- 3 tbsp maple sugar (You COULD use coconut sugar if necessary, but, maple will give you ideal taste + color. Coconut sugar browns/burns much quicker.)
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- ¼ tsp freshly grated nutmeg
- ⅛ tsp sea salt
