Raspberry-Coconut Bars on PaleoParents.com {Paleo, Gluten-Free}
Ingredients
  • [b]Crust[/b]:
  • 1-1/4 cups almond flour
  • 3/4 cup unsweetened shredded coconut flakes
  • 1/4 cup butter (OR 2 tbsp coconut oil + 2 tbsp ghee), melted
  • 3 tbsp coconut sugar
  • 2 tsp vanilla extract
  • 1/4 tsp freshly grated nutmeg
  • 1/4 tsp sea salt
  • [b]Filling[/b]:
  • 2 cups raspberries – fresh [about 1 pint) OR frozen
  • 3-1/2 tbsp tapioca flour
  • 1/4 cup honey
  • Juice of 1/2 a lemon (about 1-1/2 tbsp)
  • Zest of 1 lemon
  • 1/2 tsp vanilla extract
  • 1/8 tsp sea salt
  • [b]Topping[/b]:
  • 1/2 heaping cup shelled walnuts (pecans work, too)
  • 1/2 cup unsweetened shredded coconut flakes
  • 1/4 cup almond flour
  • 3 tbsp maple sugar (You COULD use coconut sugar if necessary, but, maple will give you ideal taste + color. Coconut sugar browns/burns much quicker.)
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1/4 tsp freshly grated nutmeg
  • 1/8 tsp sea salt
