Paleo Maple-Bacon Chocolate Chip Cookies

Uhhhhhh, let’s just be honest here. Who needs a lame ass blog post when you have maple bacon inside of an already-Perfect Paleo Chocolate Chip Cookie?!
I spout enough mumbo jumbo on a regular basis, that today I’ll spare you the novel and skip straight to the R E C I P E.
Now, get yo’ rump off the computer & gets ta’ bakin’!

Paleo Maple Bacon Chocolate Chip Cookies
 
This recipe is based off my Perfect Paleo Chocolate Chip Cookie recipe. I didn't think they could get any more perfect, until the addition of maple-bacon...
Ingredients
  • 4-5 slices raw bacon
  • 2 tbsp maple/coconut sugar
  • ⅔ cup tapioca flour
  • ⅓ cup coconut flour
  • 1 tsp baking soda
  • ⅛ tsp sea salt
  • 1 tbsp unflavored, grass-fed gelatin powder
  • ⅓ cup ghee or butter, melted (I sometimes use half ghee + half coconut oil)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • ½ cup chocolate chips (I use Enjoy Life or Equal Exchange)
Instructions
For the Bacon:
  1. Preheat oven to 400.
  2. Toss raw bacon with sugar.
  3. Lay maple bacon on a foil-lined baking sheet & bake for 15-20 minutes until crisp.
  4. Remove bacon from oven, and allow to cool. Crumble/chop candied bacon and set aside.
For the Cookies:
  1. Preheat oven to 350 and line a baking tray with parchment paper.
  2. Mix dry ingredients (flours, gelatin, salt, baking soda) together and set aside.
  3. Whisk melted ghee/butter, maple syrup, and vanilla together and stir into dry mixture.
  4. Once batter has formed, fold in chocolate chips and candied bacon pieces.
  5. Use a tablespoon to scoop uniform balls. Flatten dough balls into cookies about 2-1/2 inches in diameter.
  6. Place onto parchment lined tray and bake for 10-13 mins until golden brown. Cool for 5 mins & enjoy!

 
Paleo Maple-Bacon Chocolate Chip Cookies - ALMOND FLOUR + COCONUT FLOUR ALTERNATIVE
 
Unlike my Perfect Paleo Chocolate Chip Cookies + their Maple-Bacon counterpart above, this almond flour + coconut flour version cools to have a more 'Chips Ahoy' cookie texture. Just FYI, they're still amazing. :)
Ingredients
  • 4-5 slices raw bacon
  • 2 tbsp maple/coconut sugar
  • 2 cups almond flour
  • 2 tsp coconut flour
  • 1 tsp baking soda
  • ⅛ tsp sea salt
  • 1 tbsp gelatin
  • ⅓ cup ghee or butter, melted
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • ½ cup chocolate chips
