Hello, sweet cavebabies! It’s Friday, again, and we’re back with our favorite paleo meals of the week! It was an exhausting week in the Merit & Fork kitchen… I’ve been elbow deep in applesapplesapples for 5 days straight, so, dinner at my parent’s house was seriously welcome! Not having to cook after spending the whole day in the kitchen is such a blessing. Plus, my mom always does an awesome job at accommodating my grain-free nagging. She’s also been kicking diabetes in the ass by following a paleo diet for several months, now! I’m SO proud of her for having the willpower to stick with it and watching my mom choose lettuce wraps & zoodles over bread & pasta is something I never thought I’d see. It’s truly a gift to be able to witness my mama take control of her health. Dad… you’re next!
So, here’s the yummy paleo meal that was ever so lovingly prepared by my mom this week. It’s her famous chicken curry (SO good!) on rice (GO AWAY, PALEO POLICE!! #TEAMWHITERICE), her even more famous daikon kimchi, and a crisp iceberg salad with freshly made buttermilk ranch. AHHHHHHHHHHHHH I love food. Especially when it’s made by someone else. And it’s paleo. And delicious.
AAAND, since I acquired greens galore from the pick-your-own-produce farm this past weekend, I decided to blend some kale & spinach up with my homemade cranberry-pomegranante kombucha! And, boy, was it delicious. (Gotta get my raw veggies in any way I can!) You couldn’t even taste the green juice… and anything that masks the healthy is a-okay in my book.
Confession time: since we’ve started the blog, my eating habits have been HORRIBLE. I won’t go into detail but let’s just say there were a great deal of vacations and vacation donuts and perhaps an ill-fated Big Mac when Ryan was out of town *cough*. My body has (understandably) revolted with the unholy gift of itchy annoying skin and general feelings of MEH. This old gal is in DIRE NEED of a reset, so I’m cleaning up my diet!
I’ve always known that I’m a giant pile of allergies, and generally try to avoid things I KNOW I’m allergic to, but the problem is, there are still a few mystery items out there making me sick. One of those things MAY OR MAY NOT be alcohol. I say may or may not because I’m holding out a tiny shred of hope that I’m not allergic to my bffs, wine and beer, but the sad truth is that I probably am, considering every time I have an adult beverage these days I immediately break out in hives. D A M M I T.
AHEM. Anyway, so I’m cutting out a bunch of crap I’m already aware of being allergic to but have been too lazy to deal with (soy, for one) and a few others that may factor in (gluten, dairy). This winter is going to be an Ethan Frome level of bleak.
Or not, because when I’m backed into a cooking corner, I get rull creative to make up for the lack of easy/delicious/unhealthy noms. So, my favorite meal this week is a cobbled together Vietnamese-esque lettuce wrap spread:
It was a pretty simple meal, chopped mint, cilantro and scallions, homemade nuoc cham, butter lettuce leaves and lime wedges to compliment seasoned ground pork. Friends – it was SO SO SO good. I wrote down the recipe as I went so perhaps I’ll post it sometime in the near future.
