Easy Paleo Caramel Sauce

This is my second caramel recipe that’s a bit more saucy and not as thick as my original Easy Coconut Caramel. This recipe is ideal for pancakes and ice cream and goodies like that where you need to get sauc-aaaay. I was always so intimidated by caramel and thought it was an extremely tedious and precise technique that only seasoned pastry chefs could master. Boy, was I wrong! This may not be your traditional caramel, but, it is a damn good paleo rendition!

Easy Paleo Caramel Sauce
  • 1 cup coconut sugar
  • ½ cup canned coconut milk, full fat
  • ½ cup ghee/butter
  • ½ tbsp vanilla extract
  • ½ tsp sea salt
  1. Melt coconut milk and butter in saucepan over low heat.
  2. Add remaining ingredients once melted and stir to combine. 
  3. Bring mixture to a boil over med high heat & throughly whisk. 
  4. Let for 1 min then whisk. Keep boiling & whisking, repeating process for 8-10 mins until caramel has reduced quite a bit - it will thicken even more when removed from heat.
  5. Remove from heat and set aside to cool.
