Classic Paleo Beef Stew

Don’t let the boring name fool you – this beef stew is out of this world EASY and DELICIOUS. I know I say things like that all the time, but, I really couldn’t believe something so simple could be so perfectly delicious. I got the recipe from Paula Deen’s Old Time Beef Stew, with a few paleo tweaks, so, you know it’s good. Whether you like your beef stew thick & gravy-like, or a bit more brothy and soupy, this recipe’s got you covered both ways.

I had been staring at two 1-1/2 lb. hunks of stew meat in my freezer with immense hesitation for MONTHS. #procrastinatorsUNITE As per usual, my perfectionist brain wanted needed to find out the “secret” to beef stew before I made ANY attempts at it. Clearly, Paula Deen has all the secrets. ALL THE SECRETS. And the secret is: simplicity is key. Less is more. Uncomplicated = better.

Who’da thunk one pot + such minimalistic ingredients could create SUCH a masterpiece. [Yes, this blogpost has snowballed into dubbing this beef stew “a masterpiece”] – BUT IT’S TRUE. AND you already have all the ingredients in your pantry, so, why not make this soon-to-be-Nobel-prize-winning beef stew tonight?! (Can foods win the Nobel prize?) I promise you won’t chase me down with a pitchfork afterwards… you’ll do the opposite… not sure what the opposite of angry-running-with-pitchforks-because-of-bad-beef-stew is, but, until I stretch this joke out too far {too late, Nicole}, just trust that you will love this recipe.

 

 

Classic Paleo Beef Stew
 
Based on the super simple Paula Deen recipe - you'll be shocked how easy & delicious this beef stew is!
Ingredients
  • 1½ lbs. cubed stew beef
  • 2 tbsp lard/bacon fat
  • 3 large carrots, sliced
  • 3 stalks celery, chopped
  • 1 onion, sliced
  • 2 cups water
  • 1 tbsp worcestershire sauce
  • 1 clove garlic, minced
  • 1 bay leaf
  • 1 tsp sea salt
  • ½ tsp paprika
  • ½ tsp black pepper
  • tapioca flour, for thickening (opt)
Instructions
  1. Brown meat in lard/bacon fat over med-high heat, about 3-4 mins per side.
  2. Add water, worcestershire sauce, garlic, bay leaf, onion, salt, pepper, and paprika.
  3. Bring to a boil, then, cover and simmer over low heat for 90 mins.
  4. Add carrots and celery. Cover and cook another 30-40 mins (depending how thick your carrots are.)
  5. If thicker gravy/broth is desired, evenly sprinkle 2-4 good pinches of tapioca flour over top while stirring. Adjust seasonings if necessary.
  6. Serve hot alongside cauliflower/potato mash and green veggies of choice.

Feel free to serve with cauli/potato mash and peas on top. [Peas are not paleo, I know. Go away, Paleo Police.]

    I just want to say how great it is that you’ve got this new section of the wetibse set up. It’s so important.
