Cherry Limeade Popsicles {Sugar-Free, Paleo}

 

 

 

 

 

Honestly, could an even better flavor combo exist?! I’m not sure about you, but, I was never a chocolate-dessert kinda gal growing up. As a kid, I always leaned towards sweets featuring my fav FRUITS – cherries, bananas, and citrus – and during the summertime, we can almost always guarantee that we’ll turn to our childhood favorites. Whether it’s burgers & dogs on the grill, watermelon and red-white-&-blue jello molds, or handheld cherry pies, lemon meringue pie, and banana pudding-‘Nilla Wafer-Cool Whip parfaits (in Dixie cups, of course). We all have at least ONE memory-sparking summertime treat, and if you don’t… well, tradition’s gotta start somewhere!

The tradition I’m starting today is, {drumroll, please…}

CHERRY-LIMEADE POPSICLES! Le Picky Boyfriend aka BabyBird [this is my family’s nickname for him as he has the picky appetite of a little baby bird] was a huge fan and actually ate the whole thing. Shocking. This means they are G.O.O.D. I know it’s not too much of an accomplishment to freeze fruit juice + water into popsicle molds and call it “amazing”, but, let’s just pretend it was a very difficult feat. ;)

If you don’t have a cherry pitter and aren’t a huge fan of pitting fresh cherries for 12 hours, feel free to use frozen black cherries! I keep a year round stockpile of cherries in the freezer for desserts and snacking. They’re slightly soft & chewy and taste just like black cherry sorbet, in my opinion – the perfect midnight snack. (So long as you wash your fingertips afterwards. I’ve woken up many-a-morning confused as to where my burgundy-stained fingertips came from. Pretty sure I’m a chronic sleepeater.)

Next time you’re out and about, I highly suggest you stock up on those bad boys. When it’s the middle of winter, they’re out of season, and you’re craving cherries, you’ll SO wish you had them. I really cannot praise frozen black cherries enough. I’ve found Target & Trader Joe’s typically have them more often than other stores, but, it’s still hit or miss.

P.S. Have extra (fresh OR frozen) cherries? Make this delicious Paleo Cherry-Almond Crisp. Served with fresh whipped cream or ice cream… YUM. I promise you won’t be sorry!

Cherry Limeade Popsicles {Sugar-Free, Paleo}
Recipe type: Dessert
 
Fresh cherries & limes come together to make a sweet & tart frozen summer treat!
Ingredients
  • 12 oz. bag frozen black cherries
  • ½ tsp lime zest
  • ⅓ cup fresh lime juice (about 2-3 limes)
  • 2 cups filtered water
  • 4-6 tbsp honey (I used 6, of course)
  • ⅛ tsp sea salt
Instructions
  1. Place all ingredients in a medium saucepan over medium heat.
  2. Cook for around 10 minutes, stirring occasionally, until cherries are hot/heated through.
  3. Place warmed cherries + liquid into a blender or food processor and gently pulse a few times.
  4. For best straining results, place some cheesecloth inside a fine mesh strainer and pour blended cherries through to remove all pulp. (Feel free to leave the pulp, if you wish! Your popsicles may have a softer, more sorbet-like texture.)
  5. Pour strained cherry liquid into an easily-pourable container (I used a glass Pyrex measuring cup), then, evenly distribute into popsicle molds.
  6. Freeze for at least 8 hours before serving. Run room-temp water over frozen molds for a few seconds to release popsicles.
